Sheet Pan Shrimp Fajitas

Are y’all ready for the EASIEST and most DELICIOUS dinner ever? Pshhh, of course you are. Let’s break these fajitas down!


These sheet pan shrimp fajitas bring so much flavor, only need a maximum of 2 dishes to make (hello easy clean up) and can be on the table in under 20 minutes. Plus, it’s healthy! It really doesn’t get much better than this.


So let’s get started! Here’s how to make it…

1. Preheat your oven to 450℉.


2. In a large mixing bowl, toss together the shrimp, bell pepper, onion, olive oil, old bay, taco seasoning, chili powder, and salt & pepper to taste.

Tossing it in a bowl, rather than on the sheet pan, allows everything to be evenly seasoned. That way each bite is perfect! But if you don’t want to wash that extra dish, go ahead and stir it around in the baking sheet.

3. Transfer ingredients to a baking sheet.

For easier cleanup, line your baking sheet with parchment paper or aluminum foil. If you’re using aluminum foil or the bare pan, it’s probably a good idea to spray it with cooking spray to prevent anything from sticking (but since there’s olive oil already in the mixture it’s not absolutely necessary). 


4. Bake for 8-12 minutes, or until shrimp are cooked through.

You can tell your shrimp are cooked through when they’re a beautiful white and pink color. There shouldn’t be any gray or translucent color left. If you’re not sure if your shrimp are done yet, cut one open with a knife and check the inside to make sure the coloring is even throughout!

5. Dress & serve your fajitas

In warm corn tortillas or lettuce cups. Squeeze lime juice over the top and garnish with cilantro and sour cream/Greek yogurt (optional).
