I hope you’re hungry, because today we’re making a super yummy side dish – perfect for your next holiday party! Although let’s be real, this is a staple all year round for us.
This dish takes everything you love about green bean casserole – green beans, mushrooms, and onions – and turns it into delicious AND healthy veggie side that won’t leave you falling asleep after your meal. It’s a win-win!
Let’s make some green beans & mushrooms, shall we? 😍
Here’s what you’ll need!
1 lb fresh green beans
1 cup mushrooms, sliced
1/2 medium onion, sliced
3 tbsp butter
3 tsp onion powder
2 tsp garlic powder
Salt & pepper to taste
1. Cook green beans in water, covered, until tender (about 5 minutes). Set aside.
Bring about 3-4 cups of water to a boil, salt the water (optional), then add your green beans. Bring it back up to a boil, cover, and cook for about 5 minutes. Be sure not to overcook! Drain into a colander.
2. Add your butter, mushrooms, and onion to a skillet and cook until tender (about 5 minutes).
This is when your kitchen starts smelling realllll good 😍 You’ll know it’s done when the onions start looking translucent and the mushrooms are starting to brown.
3. Add the green beans back to the pan. Season with salt, pepper, onion powder, and garlic powder.
You’re almost done! Season with your heart and mix together well. If it starts looking too thick, you can thin it out with a little butter, olive oil, or broth.
4. Toss together and serve!
